A deep, dark devilish chocolate sauce stops this fruity dessert from being way too virtuous. You could even add vanilla ice-cream!
Peel the pears and remove the cores.
Combine water, sugar, crushed ginger and zest of fruits and bring stock to the near boil. Add pears and poach gently for 20-30 mins, depending on the ripeness.
For the chocolate sauce, bring the cream to the near boil. Pour it over the chocolate and stir over a low heat. Pour the mixture over the pears.
