Champagne and pink grapefruit are the perfect match when it comes to this ultra refreshing summer icy treat.


  • 250ml Champagne

  • 50ml vodka

  • Juice of one pink grapefruit

  • 2 tbsp caster sugar


  • 1.

    Pour the grapefruit juice and any pulp into a frost-proof bowl. Stir in the sugar until dissolved and add the champagne and vodka. Place the bowl in the freezer for at least six hours or overnight until frozen. Then either break up with a fork or whiz it in a blender for a second to break up a little. Pour into small glasses and serve with teaspoons.
