Alan Coxon shares his foolproof recipe for classic tomato sauce. Use it as a pasta sauce or base for pasta or to add oomph to casseroles and stews.
Heat the oil in a heavy based pan, add the onions and sweat off for 2-3 minutes.
Add the garlic, cook for a further 2-3 minutes, add remaining ingredients and bring to a simmer. Turn down the heat and cook gently for 6-7 minutes. Cool slightly then blitz.
