A very simple recipe that's bursting with fresh summer flavours, this ready-in-a-flash veggie pasta makes a satisfying but light lunch or supper.


  • 500g dry linguine pasta

  • 200g fresh Basil leaves

  • 10 tbsp Italian extra virgin olive oil

  • Handful of sun-dried tomato in oil, drained and chopped)

  • 100g freshly shaved parmesan

  • Salt and pepper to taste


  • 1.

    Finely chop, with a sharp knife, the basil leaves and place in a large bowl. Add the olive oil, the sun-dried tomatoes and season with salt and pepper. Allow to rest while cooking the pasta.

  • 2.

    Cook the pasta in salted boiling water until al dente. Drain, place the pasta in the bowl with the basil dressing and mix well, serve immediately. Decorate with the shaved parmesan.
