This healthy, low-fat breakfast is packed with summer flavours and is satisfyingly filling. You can serve it for dessert too.


  • 4 ripe peaches (blanched and skin removed)

  • 125g caster sugar

  • 1 vanilla bean (or teaspoon of vanilla extract)

  • 1 tsp cinnamon

  • 1 tbsp Greek honey (the runny kind)

  • 250g natural Greek yoghurt

  • Handful of toasted almonds or hazelnuts


  • 1.

    Pre-heat the grill to high. Halve the peaches and remove the stone.

  • 2.

    Place them cut side up on a baking tray. Sprinkle with sugar and dust lightly with the cinnamon. Place under the grill to glaze.

  • 3.

    Mix together the vanilla seeds with the natural Greek yoghurt. Place the hot glazed peaches in the centre of a plate or bowl, and add a dollop of Vanilla yoghurt with a scattering of toasted almonds or hazelnuts.
