Lean turkey mince and olive oil mashed potatoes cuts down on calories, but not taste, in this healthy cottage pie.
Brown the turkey for 5 minutes, and remove from the pan fry onion, celery, carrot, carrot and garlic for 6-8 minutes. Add the red wine and reduce by two thirds. Put the turkey back into the pan, add the stock, tomatoes and tarragon and cook for 25 minutes. Divide into 6 individual pudding bowls
To make the topping, heat the olive oil and add the warm mash potato, beat well, season and add the parsley. Add a layer of topping to each pot of meat and place under a hot grill for 2-3 minutes.
