A fresh and light alternative to the classic Italian meatball dish that's full of Asian flavours.

Ingredients

  • 500g lean pork mince

  • 1 spring onion, finely chopped

  • 1 garlic clove, finely chopped

  • 3cm piece of fresh ginger, peeled and grated

  • finely grated zest of 1 lime

  • 2 tbsp of chopped coriander

  • 1 tbsp fish sauce (nam pla)

  • 1 small dessert apple, cored, grated and the excess juice squeezed out

  • 1 tbsp chopped cashew nuts

  • 250g rice or buckwheat noodles or quinoa spaghetti

  • shredded spring onion, to garnish

  • For the tomato sauce

  • 3 plum tomatoes, diced

  • 1 red chilli, de-seeded and finely chopped

  • 1 small red onion, finely chopped

  • juice of 1 lime

  • 3 tbsp chopped coriander

  • 1 tbsp rapeseed oil

Method

  • 1.

    Preheat the oven to 200c/400f/gas mark 6.

  • 2.

    For the meatballs, combine all the ingredients except the noodles and spring onion in a mixing bowl. With wetted hands, shape the mixture into small balls. Place in a roasting tin lined with baking parchment and cook in the oven for about 15 minutes, turning over once or twice until opaque and cooked through.

  • 3.

    Meanwhile, cook the noodles or pasta according to the manufacturer's instructions. Combine all the ingredients for the raw tomato sauce. Mix the two together and allow the pasta to warm the sauce. Divide the pasta between four warm bowls and top the meatballs with shredded spring onions.
