This tasty and quick recipe for hot sardines on toast can be assembled in a matter of minutes and is great for a snack or a light lunch.

Ingredients

  • 2 sardines, tinned

  • 25g tomato

  • 2 slices ciabatta

  • 1/2 garlic clove

  • 1 tbsp olive oil

  • For the salsa

  • 100g red onion, chopped

  • 1 tbsp parsley, chopped

  • 1 tbsp chives, chopped

  • 1 tbsp basil, chopped

  • 1 tbsp balsamic vinegar

  • Zest of 1/4 lemon

  • 4 tbsp olive oil

Method

  • 1.

    Heat the sardines in a pan.

  • 2.

    Rub olive oil on both sides of the ciabatta and cook in a griddle pan on both sides.

  • 3.

    Rub the garlic on the bread and squash the tomato into one slice of the bruschetta.

  • 4.

    For the salsa, mix the ingredients together.

  • 5.

    Serve the sardines on the non-tomato slice of toast and place the salsa on top.
