Splash a little olive oil over the hollowed-out tomato and sprinkle over the dried oregano and a little salt. Place in the oven for 7 minutes at 180C.
Chop the sausage meat together with the parsley, the reserved tomato pulp and some black pepper.
Roll the cheese into a ball in your hand. Mould the sausage meat around the cheese and coat with breadcrumbs.
Deep fry in the sunflower oil for 4 minutes.
Serve the kofta inside the oven-dried tomato, dusted with paprika
