This version of French toast includes a topping of cinnamon and spiced berries.
Melt a knob of butter in a pan and roast the berries over a medium heat for 5 minutes.
In a bowl, lightly whisk together the egg, cream, brown sugar, cinnamon and vanilla seeds.
Soak the bread in the mixture for 1 minute, turning after 30 seconds to ensure the liquid has soaked through.
Fry the bread in butter for 3 minutes or until golden brown on each side, turning once.
In the meantime, combine the Greek yoghurt with the lime juice and zest.
Serve the pain perdu with the roasted berries and lime yoghurt on top, dusted with icing sugar.
