Spiced pork fillet with apple Greek salad


  • 140g pork fillet

  • 20g feta, diced

  • 30g tomato, diced

  • 20g black olives, diced

  • ¼ cucumber, diced

  • 1/3 green apple

  • 1 tsp ground coriander

  • 1 tsp cumin

  • 1 tsp ground nutmeg

  • 1 tsp tumeric

  • ½ tsp paprika


  • 1.

    Cut pork into medallions and seal quickly.

  • 2.

    Mix spices together and dip meat into mixture. Pan fry.

  • 3.

    Roast 2 slices of apple. When cooked, sprinkle with teriyaki and baste.

  • 4.

    Serve on a bed of cucumber, feta tomato black olives and diced green apple in white wine vinegar and extra virgin olive oil.
