Hot mozzarella is encased in a burger patty topped off with a fresh salsa of tomato and onion and served on toasted ciabatta.
For the salsa::
Mix the ingredients together.
For the burger::
Mix the mince, garlic, parsley, chilli, egg, breadcrumbs and seasoning together. Split the mixture and make two patties. Place the slice of mozzarella on top of a patty, sprinkle a pinch of salt on it. Place the other patty on top and pinch around the edges. Keeping your hands wet. Rub the burger with olive oil and cook on a hot griddle pan for three minutes on each side.
Brush olive oil on the ciabatta and toast on the griddle.
Serve the burger on top of the bread, with salsa on top.
