Savour this recipe for a quick and simple diced chicken and vegetable stir-fry that takes minutes to cook in a smoking hot wok.


  • 100g diced chicken

  • 1 piece of ginger

  • 1 tbsp coriander

  • 1 chilli

  • 30g mange tout

  • 50g pak choi

  • 20g shiitake mushrooms

  • 1/2 tsp star anise

  • 2 spring onion

  • splash of nam pla

  • 1 tbsp ground nut or sunflower oil

  • Splash of soy sauce


  • 1.

    Heat some oil in a high sided frying pan or wok and add the garlic, chicken and a little diced chilli.

  • 2.

    As the chicken is cooking add the ginger, spring onion, mange tout and star anise followed after a minute buy the shiitake mushrooms and the splash of nam pla and soy sauce.

  • 3.

    When the chicken is cooked serve in a bowl with a sprinkle of the fresh coriander.
