All that is required to make the perfect omelette is 3 eggs, a knob of butter and great technique!


  • 3 eggs

  • Butter to fry

  • Herbs and/or ingredients for filling if desired


  • 1.

    Pre-fry any ingredients you might want to use for a filling.

  • 2.

    Crack the eggs into a bowl and lightly whisk with a fork. Season with salt and pepper. Add any herbs you might want to flavour the omelette.

  • 3.

    Melt the butter in the pan until foaming but not smoking.

  • 4.

    Add the egg to the pan, keeping it moving with a fork or non-stick-friendly implement. Make sure to bring the omelette from the outside in.  When the omelette is about to set, make it into the desired shape.

  • 5.

    Add the filling you’re having to the middle of the omelette.

  • 6.

    Tip the pan away from you and tap gently to loosen the omelette. Fold the top half over the filling to make a semi-circle.

  • 7.

    Tip the omelette onto the plate and serve.
