Pork sausage and spicy chorizo combine to make this incredibly tasty patty served on toasted ciabatta with onion rings and home-made hummus!

Ingredients

  • 3 pork sausages, meat removed from casing

  • 50g chorizo, chopped

  • 1/2 onion, cut into rings

  • 30g cheddar cheese, grated

  • 1 egg

  • 1 ciabatta roll, toasted

  • 120g tinned chickpeas, drained

  • 1 tbsp chives, chopped

  • Half a lemon

  • 20g breadcrumbs

  • 1 tsp paprika

  • 100g plain flour, seasoned with salt, pepper and paprika

  • 1 tsp cayenne pepper

Method

  • 1.

    Mix the sausage meat with the chorizo, breadcrumbs and the egg.  Mould into a patty and fry in olive oil for 5 minutes, turning once.  Place in a cry pan, place some cheddar on top and put in the oven at 160C for 4 minutes.

  • 2.

    Soak the onion rings in milk for 5 minutes to remove some of the strength of the flavour.  Remove and coat in the flour, before deep frying in vegetable oil for 2-3 minutes until golden brown.

  • 3.

    In a food processor, blitz the chickpeas with the cayenne pepper, chives and lemon juice.

  • 4.

    Remove the burger from the oven and serve atop the toasted ciabatta with the hummus and onion rings.
