Round off any meal with this super simple cherry and blueberry cheesecake recipe.


  • Handful of pitted cherries

  • 1 pt blueberries

  • 25g unsalted butter

  • 1 tbsp caster sugar

  • 1 sprig mint, shredded

  • 4 digestive biscuits, crushed

  • 100g cream cheese, at room temperature

  • 100ml double cream

  • 1 vanilla pod

  • 30g caster sugar


  • 1.

    Pour the cream in a bowl, scrape in the vanilla seeds and whisk to soft peaks. Fold into the cream cheese.

  • 2.

    Melt the butter in a pan, add the berries and sugar and cook for 2 minutes.

  • 3.

    In a glass, add the biscuits, spoon on the cheese mix, and finally a little more crushed biscuits and mint.
