A delectable and quick stir-fry of marinated guinea fowl, mushrooms and noodles topped with crunchy bean spouts.
Cut guinea fowl breast into fine slices, place in marinade and mix well.
Squeeze dry the mushrooms and finely slice. Finely slice the spring onions.
Heat ground nut oil in a wok, add the dried noodles and shallow fry.
In another wok add the chicken slithers from out of the marinade, add the ginger, garlic, salted chilli, mushrooms and fry.
Add the noodles and stir fry, add soy sauce and pepper, stir in the bean sprouts and spring onions and serve.
