Garlic fans will love this easy dip, which can be loaded onto tortilla crisps, vegetables or chips. It's great for parties or late night snacking.
Preheat the oven to 200oC / 400oF / Gas 6.
Separate the garlic cloves and place then in a roasting dish, pour over the olive oil coating evenly and roast for 20 to 30 minutes until soft.
Leave to cool for 5 minutes.
Cut off the root from each clove, peel and throw away the skins.
On a board coat all the peeled garlic cloves with salt and mash with a fork until pureed.
Mix together the garlic, mayonnaise, yogurt and lemon juice in a small bowl.
Serve with vegetable crudities and pitta bread melba toast.
