This fragrant Asian-style beef noodle soup is comfort in a bowl and takes less than ten minutes to make.


  • 750ml water

  • 1 tbsp Marmite

  • 2 tbsp olive oil

  • 25g vermicelli noodles, or rice noodles

  • Half an onion, sliced thinly

  • Half a garlic clove, finely chopped

  • 5g root ginger, finely sliced

  • 1 carrot, sliced julienne (very thin strips)

  • 1 red chilli, sliced

  • 250g beef fillet, cut into thin strips

  • ½ tbsp soy sauce

  • 1 tsp sugar

  • Chopped fresh coriander


  • 1.

    Pour the water and Marmite into a pot and bring to the boil. Meanwhile heat the oil in a wok. Add the shallots, ginger and garlic and stir fry for a minute. Add the beef and seal.

    Add the noodles to the water and rapidly boil then add the beef and vegetables. Season.

  • 3.

    Finish with the soy sauce, sugar and chopped coriander.
