This fresh green salad with pears, walnuts, and blue cheese is a great dish to serve at a picnic or dinner party.


  • 2 tbsp lemon juice

  • ¼ tsp salt

  • 1 tsp grain mustard

  • ¼ tsp black pepper

  • 60ml (2floz) extra virgin olive oil

  • 1 tbsp walnut oil

  • 1 tbsp chives, snipped

  • 2 pears, peeled, cored and sliced into thin wedges

  • 4 heads of chicory, split into separate leaves

  • 115g (4oz) walnuts, broken

  • 175g (6oz) stilton, crumbled

  • warm crusty bread, to serve


  • 1.

    Combine the lemon juice with the salt, mustard, pepper, oils and chives in a bowl.

  • 2.

    Whisk to combine.

  • 3.

    Add the pears to the dressing to prevent discolouration.

  • 4.

    Place the chicory in a large bowl.

  • 5.

    Sprinkle over the walnuts and cheese then combine with the pears and dressing.

  • 6.

    Serve with warm crusty bread.
