A delicious side dish for any occasion, try this recipe for brussel sprouts caramelised with streaky bacon and balsamic vinegar.


  • 1lb sprouts, trimmed and crossed on the bottom

  • 100g (4oz) streaky bacon, cut into strips

  • 3tbsp balsamic vinegar

  • 50g (2oz) butter

  • salt and freshly ground black pepper


  • 1.

    Blanch the sprouts for 4 to 5 minutes in boiling salted water then drain.

  • 2.

    Pre-heat a large frying pan then add in the strips of streaky bacon and fry until crisp.

  • 3.

    Add in the balsamic vinegar, sprouts and butter and toss until caramelised.

  • 4.

    Season to taste.
