Great for a lazy weekend meal. The tuna is the hero but the preserved lemon dressing makes this delicious.
Soak 2 wooden skewers in water for 1 hour.
Assemble by placing two pieces of tuna and a bay leaf on each skewer.
Coat tuna with olive oil, sea salt and pepper.
Heat a large non-stick frying pan over high heat and cook each tuna skewer for 2 minutes.
Turn and cook for another 2 minutes.
Remove from heat and place a skewer on top of each plate and serve with preserved lemon dressing.
Preserved Lemon Dressing:
Sprinkle the preserved lemon over the tuna skewers and drizzle with olive oil.
Top with oregano to serve.
