This easy but impressive dessert is summer on a plate. The combination of sweet berries and wine with warming vanilla is fantastic.

Ingredients

  • 150g/7 oz caster sugar

  • 1 vanilla pod, split

  • 1-2 tsp freshly ground black pepper, to taste

  • 175ml/6 fl oz red wine, like Valpolicella

  • 600g/1lb 5oz mixed summer fruits such as strawberries, raspberries, blueberries, blackberries

  • 1 loaf of sliced white bread

  • Greek yogurt or crème fraiche to serve

  • Tbsp chopped fresh basil

Method

  • 1.

    Sprinkle the sugar in to a heavy-based saucepan. Pour over 50ml/2fl oz water and stir to make a paste. Cook to a light golden caramel. Add the split vanilla pod, some ground black pepper and the red wine and bring to the boil. Simmer until reduced by half. Remove from the heat and gently stir in the fruit. Leave to stand until cold.

    Cut the crust from the slices of white bread and line your glass bowl evenly with the slices over lapping so there are no gaps. Fill the lined bowl with your chilled berry compote, then cover the top with slices of white bread in the same fashion as the bottom. Cover with cling film and place a plate on top, with the same diameter as the pudding and weigh down over night. Turn out on to a large serving plate or serve from the bowl with Greek yoghurt or crème friache.
