If you've never tried artichoke mash, you are in for a treat. Serve with roasts and sausages - veggie or meat - for a gastro-pub experience.

Ingredients

  • 400g (14oz) potatoes, peeled and diced

  • 400g (14oz) Jerusalem artichokes, peeled and diced and kept in a bowl of water with vinegar

  • 50g (2oz) butter

  • 100ml (4floz) double cream

  • Salt and pepper

Method

  • 1.

    Boil the potatoes and artichokes until cooked through.

  • 2.

    Drain then mash together with the butter and cream until creamy and smooth.

  • 3.

    Season to taste.
