Good for using up stale biscuits, and extra yummy with a few slices of smoked ham.


  • 2 leeks

  • Knob of butter

  • 200ml shop-bought béchamel sauce

  • 5 digestives

  • 30g/ 1 oz parmesan, grated

  • Pinch paprika

  • Pinch chilli powder


  • 1.

    Crumble digestives and mix with paprika, chill and parmesan. Put aside. Blanch/sauté some leeks in a little butter until soft. Heat the shop-bought béchamel and pour over leeks. Sprinkle the digestive biscuit mix over the top. Bake in oven for 30 minutes at 180c.
