For the coleslaw:
Simply mix all ingredients together and have ready pre-made in the fridge.
For the apple compote:
Add all apple compote ingredients to a pot and cook gently for 20 minutes.
For the fish:
Boil 2 medium sized potatoes for 10 minutes and allow to cool, slice and while warm run through the spice mix, pan fry in 1cm of veg oil.
Run the mackerel fillets through the spice mix then through a little milk and then back through the spice mix. Pan fry on both sides until golden brown.
Place the coleslaw and potatoes on a plate and top with the mackerel fillets. Finish of with apple compote and serve.
