Quick stirfried rice with avocado and horseradish


  • 115g microwavable basmati rice

  • 1 large tomato, chopped

  • ½ ripe avocado cubed

  • 2 tbsp coriander

  • 1 large egg, beaten

  • 1 spring onion, sliced diagonally

  • 1tbsp creamed horseradish

  • Vegetable oil


  • 1.

    Warm the rice in the microwave.

  • 2.

    Chop the tomatoes, avocado, coriander and spring onions then place into a bowl.

  • 3.

    Heat the oil in a wok, add the warmed rice and stir well. Add the beaten egg and mix well until the egg is cooked.

  • 4.

    Pour over the tomato mixture season well and stir in the horseradish and serve.
