This recipe for the brunch classic Egg's Benedict shows you the shortcut for a quick and easy silky hollandaise sauce.

Ingredients

  • 2 English muffins, split in half and toasted

  • 225g parma ham

  • 2 poached eggs

  • 4 tbsp hollandaise sauce

  • For the quick hollandaise sauce

  • 2 large free range eggs

  • Juice of half a lemon

  • 1 tbsp cold water

  • 225g unsalted butter, melted

  • A pinch of cayenne pepper

  • Salt to taste

Method

  • 1.

    Split muffins in half, and under a hot grill, toast until golden brown.

  • 2.

    Put ham dry in pan and cook till crispy. Place parma ham on top of each muffin half, then top with a poached egg. Coat in the hollandaise sauce and serve.

  • For the quick hollandaise sauce:

  • 1.

    Separate the eggs then place the yolks in the base of a food processor, add lemon juice and water.

  • 2.

    With the motor running, gradually add the boiling hot butter through the feed tube of the processor. Add the cayenne pepper and season to taste – you may want to add a little more lemon juice depending upon your personal preference.

After making Hollandaise Sauce the traditional way for years, I'll never bother again. Quick Hollandaise Sauce rules! The quantity is too large for two eggs, makes enough for about eight eggs! 5 Stars
