Preheat a grill to hot.
Put the cauliflower into a large Pyrex bowl and cover with cling film.
Cook on full power in a microwave for 4-5 minutes until tender.
Place the cheese, crème fraiche and mustard in a bowl over gently simmering water.
Allow to heat gently and stir well to make a smooth sauce.
Toast one side of the bread.
Drain the cauliflower and tip into a large bowl.
Using a hand-blender, blitz to form a very rough puree.
Gently fold in the cheese sauce. Season with the pepper and a good pinch of salt and mix thoroughly.
Lay a piece of ham on each slice of toast and then smother teach slice with a quarter of the cheese and cauliflower mixture.
Finally place under the hot grill for 1-2 minutes when the toasts should be bubbling and golden.
