Ingredients

  • 500g (17oz) pork stuffing of your choice

  • 8 rashers streaky bacon

  • 8 ready to eat dried apricots

  • 8 cranberries

  • 8 sprigs rosemary

Method

  • 1.

    Pre-heat the oven to at 220°/ Gas Mark 6.

  • 2.

    Roll the stuffing into 8 small balls and flatten slightly.

  • 3.

    Top each with an apricot and wrap in the bacon.

  • 4.

    Poke a rosemary sprig under the bacon and top with a cranberry.

  • 5.

    Bake along side the turkey or roast potatoes for 30 minutes.
