The cheese and Harissa is a great combination and is perfectly complimented by the crunchy cucumber.


  • 4 tortilla wraps

  • 2 tbsp Harrissa paste

  • 1 tbsp extra virgin olive oil

  • 8 tbsp soft goat’s cheese

  • 1 cucumber, cut lengthways into eight

  • 4 tbsp mint leaves, picked but not chopped

  • 2 very ripe tomatoes, cut into eight

  • Sea salt and freshly ground black pepper


  • 1.

    Spread goat’s cheese over the wrap. Mix the harrissa with olive oil and brush over wrap. Place the wrap in the middle of a large hot pan.

  • 2.

    Leave to heat through for 1-2 minutes until the topping starts to bubble.

  • 3.

    Transfer to a plate and layer with cucumber, mint and tomatoes.

  • 4.

    Season with black pepper and either roll up or serve flat. Eat immediately.
