This Asian-style coronation chicken is the perfect Monday-night supper as it's ready in a jiffy and tastes amazing. It's great for using up left-over chicken.
Heat the oil, add the onion and sauté for 1 minute.
Add the Thai curry paste and cook for a further 30 seconds.
Transfer to a bowl, mix with the remaining ingredients and season.
Serve with buttered bread.
