Good for using up odd ends of cake and a fun recipe for kids.


  • 150g/ 5½ oz white chocolate

  • 2 tbsp double cream

  • 1 tbsp orange zest

  • 2 tbsp dried cranberries

  • 300g/ 11 oz Madeira cake, cut into 1cm chunks

  • 250g/ 9 oz dark chocolate, for coating

  • 50g/ 2 oz white chocolate, for piping


  • 1.

    Melt the chocolate and cream together over a bain marie - a bowl resting on a pan of gently bubbling water.

  • 2.

    Pour the melted chocolate over the cake, cranberries and orange zest. Work it well together to break down some of the texture.

  • 3.

    Roll the mixture into 2-3 cm balls and pop in the fridge to allow to set.

  • 4.

    Coat with melted dark chocolate and pipe over some melted white chocolate.
