Stuffed Lychees

Lychees, cream cheese and nuts make a stylish canape.


  • 113g/ 4oz cream cheese

  • 1 can lychees

  • 1 tbsp rum

  • Pinch of salt

  • Pinch of pepper

  • 2 tbsp chopped brazilian nuts

  • 2 tbsp chopped crystalised ginger

  • To serve

  • 4 basil leaves, chopped

  • Zest and rind of 1 lemon


  • 1.

    Drain the lychees.

  • 2.

    In a bowl mix the cream cheese with the salt and pepper until the mixture is smooth.

  • 3.

    Stir in the other ingredients then stuff the mixture into the lychees with a small spoon.

  • 4.

    Serve on a plate garnished with the lemon zest and basil.
