This very easy to prepare recipe for welsh rarebit with poached eggs makes a great snack or light meal.


  • 300g (11oz) sharp Cheddar cheese, shredded

  • 110 (4floz) ale

  • 1 tsp Worcestershire sauce

  • ½ tsp Tabasco

  • ½ tsp English dry mustard powder

  • 3 free range egg yolk, lightly beaten

  • 4 slices whole-grain wheat bread, toasted

  • salt and ground black pepper

  • 4 free range eggs, poached


  • 1.

    Place the Cheddar cheese, ale, Worcestershire sauce, Tabasco and mustard powder in a saucepan.

  • 2.

    Gently heat, stirring constantly, until the cheese is completely melted and smooth.

  • 3.

    Stir 3 or 4 tablespoons of the melted cheese mixture into the beaten egg yolk.

  • 4.

    Pour this mixture back into the cheese sauce, and stir well until the egg is thoroughly blended.

  • 5.

    Remove from the heat and season to taste.

  • 6.

    Place a slice of toast on each plate with a poached egg on top, spoon over the rarebit sauce and serve.
