This very easy to prepare recipe for welsh rarebit with poached eggs makes a great snack or light meal.
Place the Cheddar cheese, ale, Worcestershire sauce, Tabasco and mustard powder in a saucepan.
Gently heat, stirring constantly, until the cheese is completely melted and smooth.
Stir 3 or 4 tablespoons of the melted cheese mixture into the beaten egg yolk.
Pour this mixture back into the cheese sauce, and stir well until the egg is thoroughly blended.
Remove from the heat and season to taste.
Place a slice of toast on each plate with a poached egg on top, spoon over the rarebit sauce and serve.
