• 1 egg, soft boiled and peeled

  • Smoked salmon

  • ¼ shallot

  • 1 tsp chervil/dill/flat leaf parsley, chopped

  • Squeeze lemon juice

  • 1 egg yolk

  • Eggwash

  • Seasoned flour

  • Handful sesame seeds


  • 1.

    In a blender blitz the salmon with the other ingredients.

  • 2.

    Put paste into a bowl and chill in a bowl of iced water for 10 minutes.

  • 3.

    With your hands, mould the paste around the egg until evenly covered.

  • 4.

    Dip the egg in the flour, then the egg wash then coat in sesame seeds

  • 5.

    Fry in deep fat fryer for 1 minute.
