Main content

Chilli, herbs and garlic add heaps of flavour to lentils in this yummy salad. Make it for buffets and barbecues and serve it in a large bowl, dressed with rocket.


  • Dash olive oil

  • ½ red pepper, finely chopped

  • ½ green pepper, fine chopped

  • ½ red onion, finely chopped

  • ½ chilli, finely chopped

  • 1 clove garlic, crushed

  • Cooked lentils

  • Salt and pepper, to season

  • 50ml/ 2 fl oz red wine vinegar

  • ½ bunch spring onion (chopped)

  • ¼ bunch mint (chopped)

  • Handful rocket


  • 1.

    In a large pan heat some olive oil. Fry the peppers, onion, chilli and garlic. Cook for 1 minute.

  • 2.

    Add the lentils and season. Add the red wine vinegar, spring onion and mint. Serve in a bowl with rocket.
