Using red wine in this recipe gives this red onion marmalade a deeper, richer flavour.


  • 450g red onions

  • 3 chopped cloves of garlic

  • 100g brown sugar

  • 2 tbsp red wine

  • 2 tbsp red wine vinegar

  • 1 Jalapeno pepper

  • Butter for sweating

  • Salt and pepper


  • 1.

    To make the marmalade start by melting the butter in a heavy based pan.

  • 2.

    Add the onion, and sweat for 2 minutes, add the garlic and continue sweating off for a further 5 minutes. Add all the other ingredients, cover and cook for 15-20 minutes until you have a marmalade consistency and set aside.
