Tomato Chutney


  • 2kg tomatoes peeled and chopped

  • Finely grated zest of 2 lemons

  • 750g brown sugar

  • 8 whole cloves

  • 1 stick cinnamon

  • 2 bay leaves

  • 500ml dry red wine


  • 1.

    Combine all the ingredients in a large saucepan and bring to the boil, stirring until all the sugar dissolves.

  • 2.

    Simmer uncovered for 1 hour, until the mixture has thickened to the consistency of jam.

  • 3.

    Pour into hot, sterilised, jars and cool. Serve hot or cold.
