Liven up roasts, grills or poached fish with this bright and breezy side dish.


  • ½ bag frozen peas, defrosted

  • 10 baby onions, blanched. You can use the frozen silver skin ones

  • 1 x baby gem lettuce, leaves separated

  • Few drops of water

  • 25g/1oz butter

  • 25g/ 1oz flour

    In a pre-heated pan, colour off the onions in butter. Add the peas and lettuce, cook for a minute, then add the water and season. Mix the flour and butter together and add to the peas to create a smooth creamy texture. Serve as a side dish with lamb cutlets.
