Raspberry And Peach Meringues With Elderflower Cream

This yummy dessert looks really pretty and is whipped up from a few basic ingredients. Make it when time - and ingredients - are in short supply.


  • 150ml double cream

  • 3 tbsp elderflower cordial

  • 1 small punnet of raspberries (frozen if fresh aren’t in season)

  • 3-4 ripe peaches, sliced (tinned if fresh aren’t in season)

  • 4 home-made or bought meringues

  • Sprig of mint, to serve


  • 1.

    Lightly whisk the cream until it just starts to form soft peaks and then stir in the elderflower cordial. This will start to thicken the cream even more.

  • 2.

    Fold half the raspberries and peaches.

  • 3.

    Spoon on top of the meringues and then finish with the remaining fruit on top. Serve with a sprig of mint.
