Leeks wrapped in salty ham are topped with a creamy cheese sauce and baked until golden brown.
For the cheese sauce -
Pre-heat the oven to 190°C/ Gas mark 5.
Melt the butter in a small pan.
Add the flour and beat well with a wooden spoon.
Gradually pour on a little of the milk, beating all the time with the wooden spoon until the milk is incorporated and the sauce is smooth and thickened.
Pour on a little more milk, beat until smooth and continue until all the milk has been added.
If the sauce is a little lumpy, use a small whisk to beat out the lumps.
Stir in a good shake of salt and pepper and add the mustard.
Lastly add the cheese and stir until melted.
To assemble -
Dry the leeks on a cloth.
Wrap a slice of ham around each and lay them in a shallow baking dish.
Pour over the cheese sauce and sprinkle with cheese.
Bake for 30 mins until golden and tender.
