A moist ginger cake, usually cut in squares.


  • 1lb oatmeal, medium

  • 1lb flour

  • 6 oz brown sugar

  • ¾lb treacle

  • ½lb butter

  • ½oz ground ginger

  • 1 tsp full bicarbonate soda

  • Milk, to mix


  • 1.

    Mix the flour, oatmeal and ginger together in a bowl. Warm the treacle and butter together and add the flour mixture.

  • 2.

    Dissolve the bicarb in a little milk, then mix altogether and pour in a greased baking tray.

  • 3.

    Bake in a slow oven till cooked. Cut into squares and serve.
