Matt Tebbutt serves seared salmon with cherry tomatoes and a warming glass of hot chocolate.
Chop half the cherry tomatoes and mix with 2tbsp olive oil, lemon juice and coriander seeds in a bowl.
Fry the remaining cherry tomatoes in a pan with 4tbsp olive over a medium heat for 4 minutes.
Drizzle 1tbsp olive oil over the salmon fillet and season with salt and pepper. Sear the salmon in a hot pan, for around a minute each side.
Serve the salmon with the roasted cherry tomatoes and tomato and coriander mix.
For the hot chocolate melt the buttons in a bowl over boiling water. Stir in the milk and serve.
