This is utterly wicked. But that doesn't mean we will say no to a second helping!
Scoop the ice cream onto the filo pastry and roll, making sure it is packed tightly. Brush the roll with the maple syrup then place in the freezer for an hour until frozen. Deep fry for 1 minute until golden. Remove and drain. Melt the chocolate in a Bain Marie. Sprinkle the raisins on top, dust with icing sugar and drizzle with the melted chocolate.
