An easy-as-anything starter or canape that's so smart.


  • 300g baby vine tomatoes

  • 1 packet puff pasty, ready rolled if time is really short

  • 1 egg yolk

  • 20g butter

  • 10oz baby artichoke hearts preserved in oil, drained

  • 1 packet buffalo mozzarella, sliced into pieces

  • sea salt

  • freshly ground black pepper

  • sprigs fresh thyme

  • 100g rocket

  • olive oil for drizzling


  • 1.

    Heat the oven to 180, 350f, gas 4.

  • 2.

    Put the tomatoes in a roasting try, drizzle with a little olive oil and toss roast in the oven for 15 minutes.

  • 3.

    Roll out the pastry and cut into 4 rounds approx 10cm, brush over with the egg yolk and place on a lightly buttered baking sheet, top with the artichoke hearts, mozzarella, roasted tomatoes, thyme and seasoning.

  • 4.

    Cook in the oven for 25 minutes. When cooked place some rocket leaves on top drizzle with a little olive oil and serve.
