This will keep for up to three weeks in the fridge.


  • 6oz brandy or Cognac

  • 6oz soft brown sugar

  • 6oz unsalted butter

  • pinch of nutmeg

    Blend the sugar and the butter together until pale and creamy. Slowly add the brandy, mixing well as you go along. When all the brandy is combined, put the mixture into a ramekin or bowl and place in the refrigerator. It will keep for up to three weeks.
