A great British classic to serve with game and poultry.
Bring the milk and cream to simmering in a saucepan.
Add the onion, cloves and bay leaf. Leave to infuse for 20 minutes. Strain into a clean pan.
Add the breadcrumbs. Simmer for 2 minutes until thickened. Season with the salt and cayenne pepper.
Remove from the heat melt the butter on top, which will form a seal until ready to serve. When read to use mix the butter in and serve.
