An authentic Italian antipasti of marinated Parma ham, sautéed mushrooms and chilli olives.

Ingredients

  • Ham and mozzarella

  • 10 slices of Parma ham

  • Italian olive oil

  • Italian extra virgin olive oil

  • Fresh red chilli (finely sliced)

  • 3 clove garlic (sliced)

  • Handful of salted capers

  • 3 sliced mozzarella balls

  • Parmesan mushrooms

  • 400g fresh mixed mushrooms

  • 1 medium size onion (finely sliced)

  • 200g block of Parmesan cheese

  • Italian olive oil

  • Saltand pepper to taste

  • Olives

  • 1kg black olives (with stones)

  • The peel and juice of two oranges.

  • 10tbls Italian extra virgin olive oil

  • 1 pinch of crushed dried chilli

  • Salt to taste

Method

  • 1.

    Put the Parma ham, capers, garlic and chilli and cover with 75% olive oil and 25% extra virgin olive oil in a tray (20cm long and 3cm deep).  Leave to marinate for at least 24 hours.  To serve the dish, layer the marinated ham on top of sliced mozzarella.

  • 2.

    Fry the onion till golden in a couple of tablespoons of olive oil. Add the mushrooms and cook for approx. 2 minutes. Season and allow to cool. Cut the Parmesan cheese in sticks. Mix in with the mushrooms. Place the ingredients in a tray (20cm long and 3cm deep) and cover with 75% olive oil and 25% extra virgin olive oil.  Leave to marinate for at least 24 hours. Serve.

    Place the olives in a large bowl adding in the orange peel.  Add the chilli, salt and extra virgin olive oil and allow to marinate for at least 24 hours. Serve.
