An authentic Italian antipasti of marinated Parma ham, sautéed mushrooms and chilli olives.
Put the Parma ham, capers, garlic and chilli and cover with 75% olive oil and 25% extra virgin olive oil in a tray (20cm long and 3cm deep). Leave to marinate for at least 24 hours. To serve the dish, layer the marinated ham on top of sliced mozzarella.
Fry the onion till golden in a couple of tablespoons of olive oil. Add the mushrooms and cook for approx. 2 minutes. Season and allow to cool. Cut the Parmesan cheese in sticks. Mix in with the mushrooms. Place the ingredients in a tray (20cm long and 3cm deep) and cover with 75% olive oil and 25% extra virgin olive oil. Leave to marinate for at least 24 hours. Serve.
Place the olives in a large bowl adding in the orange peel. Add the chilli, salt and extra virgin olive oil and allow to marinate for at least 24 hours. Serve.
