A gorgeous combination of fresh fruit, dried fruit and nuts. This is a wonderful Christmas or winter dish.


  • 1 Asian pear thinly sliced

  • 1 commice pear thinly sliced

  • 2 thin slices of baby pineapple skinned

  • 5 raspberries

  • 1 orange segmented

  • 2 dried apricots steeped in rum

  • 25g raisins steeped in rum

  • 15g dried cranberries

  • 2 dried mangoes cut into strips

  • 1 sprig of mint

  • 20g pecan nuts

  • 20g macadamia nuts

  • 20g roasted hazel nuts

  • 200ml good red wine

  • 50gms dark soft sugar

  • 1 cinnamon stick

  • 2 cloves

  • Double cream for whipping

    Arrange the fruit in a stack formation in the centre of the plate, place the orange segments around the stack. Place the wine, cinnamon stick, cloves and the sugar in a pan and reduce by one half.

    Then add the dried fruit and nuts and cook for a few minutes. Spoon the syrup over the fruit stack and arrange the dried fruit and nuts in between the orange segments and spoon over more syrup.

    Place the raspberries on top of the stack. Serve with a big dollop of sweetened whipped cream and sprig of mint.
